The following is a list of meal Ideas I threw together.  They are generally quick and are healthy too!


Lime Chicken Tacos

Ingredients

  • 1-1/2 pounds boneless skinless chicken breasts
  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 cup frozen corn
  • 1 cup chunky salsa
  • 12 fat-free flour tortillas (6 inches), warmed
  • Sour cream, shredded cheddar cheese and shredded lettuce, optional

Directions

  • Place the chicken in a 3-qt. slow cooker. Combine lime juice and
  • chili powder; pour over chicken. Cover and cook on low for 5-6 hours
  • or until chicken is tender.
  • Remove chicken; cool slightly. Shred meat with two forks and return
  • to the slow cooker. Stir in corn and salsa.
  • Cover and cook on low for 30 minutes or until heated through. Serve
  • in tortillas with sour cream, cheese and lettuce if desired. Yield:
  • 12 tacos.
Nutritional Facts: 1 taco (calculated without sour cream and cheese) equals 148 calories, 2 g fat (trace saturated fat), 31 mg cholesterol, 338 mg sodium, 18 g carbohydrate, 1 g fiber, 14 g protein. Diabetic Exchanges: 2 lean meat, 1 starch.

30 Minute Chili
 
Ingredients
  • 1lb Ground Turkey
  • 1 package Chili Season Mix
  • 2 (14.5-oz.) cans diced tomatoes with green pepper, celery, and onion
  • 2 (8-oz.) cans tomato sauce
  • 1 (16-oz.) can black beans, undrained
  • 1 (15.5-oz.) can small red beans, undrained
  • Serve with Organic Brown Rice or other Whole grain option

Preparation
1. Brown turkey in a large (deep) saute pan over medium-high heat, stirring often, 4 to 5 minutes or until it crumbles and is no longer pink; drain well. Return to pan ; sprinkle evenly with seasoning mix, and sauté 1 minute over medium-high heat.
2. Stir in diced tomatoes and remaining ingredients
           -bring to a boil over medium-high heat, stirring occasionally. Cover, reduce heat to low, and simmer, stirring occasionally, 15 minutes
           -OR
           - Throw in crock pot on low for a few hours till warm!!

Makes 6 to 8 ONE CUP servings. Prep: 10 min., Cook: 25 min.
Calories per 1 cup serving = 250cal
